Red Wine Latin Appetizer Pairing

Last month, I shared a Sutter Home white wine Latin appetizer inspired food and wine pairing. The shrimp ceviche and mango pineapple salsa was such a scrumptious, delicious recipe! You can read about it here. Now, personally I enjoy red wines more often. Luckily, Sutter Home has such an array of different choices, both red and white, that it's so easy to find something that everyone will enjoy!  I love a good Red Blend wine. This Sutter Home Red California Blend has such a rich and bold flavor that I instantly wanted to pair it with a savory appetizer recipe. Typically, red wine is paired with savory meals like steak. Today, I will be sharing a Chorizo Flatbread Pizza that is perfect for entertaining friends at home, or to snack as a date night in. 

For those you who are not familiar with chorizo, it is a spicy pork sausage used in many Latin dishes. Personally we use it a lot for breakfast in egg scrambles. The taste can be described as spicy and flavored ground beef. It can be ground, like in this recipe, or in links. I have seen a newer trend with flatbread pizzas in both mainstream and unique restaurants as well as a tapas (Latin small plates) dining experience and wanting to make it at home for Isaak and I.


Sauce Ingredients 
13.5 oz Fire Roasted Diced Tomatoes 
1 clove minced garlic
1 tsp Balsamic Vinegar 
1 1/2 tsp sugar
1/4 tsp oregano 
2 tbs olive oil
1/4 tsp red chili flakes

1/3 red onion thinly sliced
4 oz goat cheese 
10 oz chorizo
grapeseed oil (for drizzling)

Pizza crust (I bought pre-made flat bread crust)
Baking Sheet or Pizza Stone

1. Preheat oven to 350 degrees
2. Using a deep saucepan, combine all sauce ingredients over medium heat. Bring it to a boil and let thicken for 5-7 min.
3. Cook the chorizo in another pan over medium heat until browned.
 4. Caramelize the red onions in a third saucepan over medium heat with 2 tsp olive oil. Cook until onion is softened.
4. Using a baking sheet or pizza stone layout flatbread pizza. 
5. Top with pizza sauce
6. Place a good amount of chorizo on top. And add the onions.
7. Follow pizza crust directions on package. Cook until no longer soft.
8. After crust is cooked remove pizza from oven and top with arugula, crumbled goat cheese, and finally drizzle the olive oil on top.

* I reccommend using a pizza crust that is thicker than I used. The sauce and chorizo are kinda heavy and you need a crust to support the toppings!

Presentation is key! Serve your chorizo flatbread pizza on a wooden cutting board with other savory treats like red grapes, figs, or even additional cheese and crackers. Most importantly don't forget to pair it with Sutter Home Red California Blend wine!
